
I love nut butter but unfortunately, it’s very hard to find in danish supermarkets. Luckily, it’s so simple to make a homemade version. All it takes is a strong food processor and about 10 minutes’ patience. I use nut butters in my morning porridge, on my banana bread, in my chocolate covered dates or I will just eat it straight from the jar when my blood sugar drops in the afternoon (oops).
You can use any kind of nuts or seeds for this. It's a good tip to add seeds to bring the price down a bit as well as add some other nutrients.
INGREDIENTS
Makes: 1 small jar
2 dl sunflower seeds
2 dl almonds
2 dl cashew nuts
¼ tsp vanilla powder
1 pinch of salt
METHOD
Turn the oven to 180 degrees Celcius
Roast the seeds and nuts in a baking tin in the oven for about 10 minutes until golden
Let the seeds and nuts cool down before you transfer them to a food processor
Blend the nuts for about 10 minutes in the food processor. At first a flour will form, after a few more minutes the oil will be extracted from the seeds and nuts and the mixture will form a ball and finally after about 10 minutes the nut butter will be smooth and delicious – be patient!
