MORNING TRIFLE

This trifle is one of my go to brunch servings. It’s a perfect combination of sweet fruit jam, sour and creamy yoghurt and crunchy granola. You can use any jam you prefer but I usually make my own.


Making jam is simple – you just add frozen fruit (I love berries or plums) and a splash of water to a saucepan and let it simmer over medium heat until jam consistency. Afterwards you can blend it or leave it as it is. I thicken my jams with chia seeds and sweeten it with honey, maple syrup, coconut sugar, or brown sugar.

INGREDIENTS

Makes: 1 (adjust the amount to the number of people you’re spoiling with this luxury breakfast)

  • 3 tbsp. jam

  • 3 tbsp. greek yoghurt (or you can use a vegan alternative)

  • 1 handful granola

METHOD

  1. If you’re making the jam yourself then make sure to make it at least a few hours before serving in order to have time for it to cool down

  2. Layer the jam, yoghurt and granola in a small glass and you're good to go!
