
Christmas food can be very heavy on its own – I like to serve sides of salads with the traditional Christmas food to make it a bit lighter. This kale salad is a perfect option as a side dish.

The salad can also be served as a meal on its own – I would just add more avocado, oven-baked chickpeas and quinoa, pearled spelt or bulgur.
INGREDIENTS
Makes: 1 large bowl
1 large bowl of kale (rinsed and chopped)
3 tbsp. olive oil
3 tbps. tahini
2 tbsp. apple cider vinegar
1 tbsp. soy sauce
1 tbsp. mustard
Juice of ½ an orange
2 avocados
2 oranges
1 large handful of walnuts
METHOD
Roast the walnuts on a dry pan until they're a bit more golden - leave to cool.
Add the kale to a large bowl
Mix oil, tahini, apple cider vinegar, soy, mustard, and orange juice in a small bowl
Pour the dressing over the kale and massage it into the kale to soften it a bit
Chop avocado, orange, and walnuts and add to the salad.
